2007 Chardonnay

‘Citrus characters are synonymous with ‘Great Southern’ Chardonnays. Fresh fruit characters of pink grapefruit and peaches followed by yeasty and bready notes. Firm acid structure and a clean ‘lightly oaked’ finish.

Machine harvested in the cool of the evening the grapes were crushed and pressed the following morning. After 36 hrs to settle and clarify the juice was ‘racked’ and warmed and inoculated with selected yeast. 

The juice was fermented in both French oak barrels and stainless steel tanks. New and 1 year old French barrels were stirred weekly to gain complexity and structure for the wine. Stainless steel fermentation with monthly stirring of the yeast lees was used to preserve the delicate fruit flavours. 

Both components were blended in December 2007 resulting in a wine showing elegant fruit flavour with complexity and structure from yeast lees and quality oak.
